Peanut Butter Pork Rind Bars

Ingredients

    • 4 cups Southern Recipe Pork rinds, crushed into pieces
    • 1/2 cup Butter
    • 3/4 cup Peanut butter
    • 2/3 cup Powdered sugar substitute
    • 1/2 tsp Caramel extract
    • 1/4 cup Flaked coconut
    • 6 oz Sugar-free dark chocolate
    • 2 Tbsp Coconut oil

Preparation

Line an 8x8-inch baking pan with waxed paper.

In a large saucepan over medium-low heat, combine the peanut butter, butter, and sweetener. Stir until melted. Add in the caramel extract. Combine well.

Add the crushed Southern Recipe Pork Rinds and flaked coconut and stir to coat completely.

Remove the mixture from the saucepan and press the mixture firmly into the baking pan. Chill until firm, about 45 minutes.

In a heatproof bowl set over a pan of barely simmering water, melt the chocolate and coconut oil together. Spread over the chilled bars and let set in the refrigerator for 20 minutes.

Remove the bars from the baking pan and cut into squares.
